Default Is VPS enough for running a b2c eCommerce site?

VPS should able to handle your B2C website till the period your traffic increases then you can always upgrade to higher VPS or Dedicated Server. At the moment, VPS is sufficient for the requirements you mentioned.

Depends on how busy your eCommerce site is. If you have active site now, you should know your server requirements. Definitely VPS is one of the options, and most of the time sufficient to handle eCommerce site.
