Exmasters.com (http://www.exmasters.com/virtual/) and vps6.net (http://vps6.net/xen/)provide stable VPS deals which are to my liking but I have to opt for the best one.
Which company is better to sign up with?

I have not heard about both these companies, if you have filtered these hosting providers I would suggest you to check few things like - 24/7 support is provided through email, live chat or phone, uptime and money back guarantee, check ping response, ask for a zip file and download it to check the speed, datacenter location, network connectivity, security measures etc. If you get satisfactory response to these questions you may sign up with one of them.

Gigapros.com gives the best mix of pricing, customer support and has a good user interface.
Check out their VPS hosting (http://www.gigapros.com/portal/products-a-services/vps-hosting) solutions. Uptime has been nothing but the best and definitely lives up to their 99.9% uptime guarantee.

I think you should have more options to choose from. As an alternative I suggest to use ChicagoVPS (http://chicagovps.net/) servers. Their pricing policy is simple and flexible and their network is fully-redundant.

In June 2012 I've been thinking about vps6.net (http://vps6.net/) and www.natcoweb.com (http://www.natcoweb.com/). But decided to choose the last because of the various hosting plans they have, additionally they give me 2 month of hosting for free.

Use a VPS (http://readymakers.com/vps.html)from readymakers.com.
There are SAS drives on them and prices are competitive.

I think you should compare offers and choose the suitable company. I'd recommend you to try 4Goodhosting and their cheap VPS plans (http://4goodhosting.com/VPS-web-hosting.html). I believe this company is reliable and stable enough to satisfy all your specific requirements and keep your web sites alive.
